We’re in the midst of it now, and here are a couple of ways to use the orange gourds. Thanks to Sue Julseth of Springfield, Ill., for sharing two of her favorite recipes.


“These are so nice and moist and freeze nicely, too, if made in advance,” she said about the cookies.


Pumpkin Cookies


1 (15-ounce) can pumpkin


3 tablespoons evaporated milk


2 eggs


2 teaspoons vanilla


1 1/2 cups oil


4 cups flour


2 cups sugar


2 teaspoons baking powder


2 teaspoons cinnamon


2 teaspoons baking soda


1 cup nuts (optional)


Preheat oven to 350 degrees. In a large bowl, combine first five ingredients and mix well. Add next five ingredients and beat for 2 minutes. Stir in nuts, if using. Drop by teaspoonfuls onto greased cookie sheet. Bake 10 to 12 minutes or until done. Cool. Makes 3 to 4 dozen.


Pumpkin Bread


3 1/2 cups flour


2 teaspoons baking soda


1 1/2 teaspoons salt (optional)


1 teaspoon cinnamon


1 teaspoon nutmeg


2 1/4 cups sugar


1 cup oil


4 eggs


2/3 cup water


1 (15-ounce) can pumpkin


Mix together flour, baking soda, salt, cinnamon, nutmeg and sugar. Then add oil, eggs, water and pumpkin. Bake at 350 degrees in pans sprayed with nonstick spray. If using regular loaf pans, bake approximately 1 hour. If baking mini loaves, bake 45 to 50 minutes. Makes 2 standard-size loaves or 6 to 7 mini loaves.
